1 Soak the Medjool dates in boiling water for 5-10 minutes to soften them.
2 Add the dates into the blender along with the water, canned coconut milk, peanut butter, vanilla extract, salt and maca powder. Blend until smooth.
3 In a small bowl mix the yogurt and salted caramel protein until smooth.
4 In another bowl, crumble up the peanut protein energy bars.
5 To assemble, add in a layer of the crumbled peanut bars followed by fresh banana slices, caramel and yogurt. Repeat until you’ve used up all of the ingredients (serves 2). Enjoy immediately or chill in the fridge for 1 hour before serving.
